Campsite Cooking: Trailside Chicken and Rice
Trailside Chicken and Rice is a really easy and lightweight meal for your next backpacking trip. This backpacking recipe has few ingredients, can be premixed at home, is lightweight and is easily packable for longer backpacking trips.
1 cup of Instant Rice
1/2 package of Onion Soup Mix
1/2 package of Mushroom Soup Mix
1 5oz. can of precooked chicken
Pour rice and soup mix into a plastic bag with zip closure. Let all of the air out of the bag for optimal packability.
At the campsite:
Bring 2 cups of water to a boil. Add the rice mixture and stir occasionally. After a few minutes, stir in the chicken. Taste the rice to see if it is fully cooked.
If you are interested in saving even more weight, you could substitute pouch tuna for the chicken. This will still provide a tasty protein kick and save you the weight of the can. Also, you could add some powdered milk to the recipe to make it a little more creamy.
